Fall is upon us. I love the flavors of fall. Butternut squash, pumpkin, turkey and cranberries. So for today I wanted to make a nice breakfast treat that fit in with those flavors. I am addicted to pancakes so I decided to make pumpkin pancakes. They are easy to make and full of flavor.
Top with real maple syrup and a little whipped cream.
Pumpkin Pancakes
Combine the flour, sugar, baking powder, salt and spices into a big bowl. Using a whisk combine the ingredients.
In a separate bowl combine the milk, pumpkin, egg and vegetable oil. Whisk together.
Add the wet ingredients into the flour mixture. Using a whisk combine until the flour mixture is just moistened. You do not want to over-work the batter. Don’t worry if it is lumpy.
Heat a skillet or griddle to medium. Coat lightly with a little butter and then pour 1/4-1/2 cup of the pumpkin batter onto the skillet. Cook until bubbles form on the top side.
Flip and continue to cook for 1-2 minutes. Be careful not to burn the pancakes. It may take some adjustments to get the temperature perfect.
Place the cooked pancakes onto a plate and keep them in a warm oven until ready to serve.
