Thanksgiving Pizza

This week I have preparing for Thanksgiving.  It all started when Foodbuzz.com and Shadybrook Farms sent me a Turkey Breast.  From there I made Potatoes, Biscuits and Stuffing.  Traditionally the day after Thanksgiving is filled with shopping deals a lot of leftovers.  I have been thinking about ways to use the leftovers.  I have finally figured out the perfect thing.  Thanksgiving Pizza.  Start with a biscuit pizza crust and layer on the leftovers.  It is the perfect food.  It combines pizza with all of the favorites from Thanksgiving.  The ultimate day after Thanksgiving meal. Thanksgiving Pizza!

Topped with a little cheddar cheese, this pizza is awesome!!!

Thanksgiving Pizza

  • 1 biscuit dough – Buttermilk Biscuits, or use store bought.
  • 1 cup leftover gravy – Plus a little extra for drizzling
  • 1 cup leftover mashed potatoes – Whipped Red Skin Potatoes
  • 1 cup leftover stuffing – Herb Stuffing
  • 1 cup leftover turkey – Herb Roasted Turkey Breast
  • 1 cup cheddar cheese

Pre-heat the oven to 400 degrees.

In a bowl combine biscuit ingredients and form a dough.  Next turn the dough out onto a pizza pan.  Since biscuit dough is fragile and sticky, it is best not use a pizza peel and stone.  Form a pizza dough.  Next bake the dough for 5-7 minutes.  Just until it starts to get a little firm.

Remove the dough from the oven and coat with the gravy.

Coat with the gravy, from my experience more is better. The amount shown above is not enough gravy. It was a little more than half a cup. 1 cup should be perfect.

Spoon the potatoes onto the pizza.  Make little clumps.  That way there will be a little potato in every bite.

Spoon the turkey and stuffing onto the pizza.  Once again, spread it out evenly over the whole pizza.

Finally top with the cheese.  You don’t want to overpower the ingredients so I found that about 1 cup is perfect.

Bake in the preheated oven for 12-18 minutes, or until the cheese is melted and starting to brown.

Remove the pizza from the oven and let cool for a minute before cutting.  Serve with a side of gravy for dipping or with dollops of cranberry sauce.  This is the tastiest way I have found to use leftovers.  I love Thanksgiving Pizza!!
