I am a big fan of brie. So when I went to the store and they had wheels of brie on sale, I knew I was going to have to pick some up. Warmed brie is excellent, so I decided to wrap it up in some puff pastry. This is a great appetizer and it takes no time at all to prepare, as long as you don’t count waiting for the puff pastry to thaw.
Serve alone or with a side of crackers, toasted bread or apples.
Puff Pastry Wrapped Brie
Thaw the puff pastry. Let it sit at room temperature for 20-30 minutes.
Preheat the oven to 400 degrees.
Unfold the pastry on a floured surface. Roll out the pastry with a rolling pin to remove the creases. Using a pizza cutter cut out a 1/4-1/2 inch ribbon of dough from one edge. We will use this to make a decoration. Place the brie in the center of the sheet.
Fold the pastry over the round of brie to form a tight package. Trim off any extra pastry. Make sure to make a good seal with the pastry. Flip the brie over and place it on a cookie sheet, fold side down.
Using the ribbon that we cut out earlier form a bow and place it on the top of the pastry.
Beat an egg and then brush the pastry with the egg mixture.
Place the pastry wrapped brie in the 400 degree oven for 25-30 minutes, or until it is golden brown.
Remove and let stand for 15-20 minutes before cutting into it.
Cut it open and serve with a side of crackers, toasted bread or apples.

I would eat that whole thing and gain 8lbs and it would be worth it. Steph Z made something similar but she added apricot (I think, maybe peach) preserves and it was amazing.
Also good with some pecans and brown sugar sprinkled on the brie before wrapping, or raspberry preserves, or cranberries....yum!
I'd take the plate and hide it from the rest of the party guests just so I could have it all! That looks amazingly good.
