Last week I made Chipotle Peach Chicken. It was awesome and as soon as I tasted the barbecue sauce I realized that it would be an amazing hot wing sauce. So I fine tuned it and made some wings. I must admit that it was awesome. The wings have a little heat on the front end, a sweet note and then the spice hits you on the back end (yeah I said back end). Totally awesome. Since the main part of the heat is on the back end, you can eat a couple and let the spice build. Basically the perfect hot wing.

The hot wings went fast. Even people that hate spice really liked the wings.

Peach Hot Wings

The main sweetness in this sauce comes from the peach preserves.  Since the preserves have a natural thickening agent and are loaded with sweetness, this the easiest wing sauce in the world to make.

Add all of the ingredients into a saucepan and heat until the preserves melt and set aside.

Prepare your grill for indirect cooking.  Basically heat half of the grill to medium/high.

Season the chicken wings with salt and pepper and place them over the cold part of the grill.  Cook for 15 minutes and then flip the wings and cook for another 15 minutes.

Brush the wings with the sauce and move them over the direct heat to finish.  Brush and flip the wings 2 to 3 times.  Letting the wings sear on each flip.

Cook the wings to about 185-190 degrees for a perfectly crunchy skin and a moist wing.  The best way to check the temperature is to use an instant read thermometer.  We recommend using the Thermoworks Thermapen MK4.  The MK4 can seem a little expensive, but trust me it is worth it.  Once you have a good and accurate thermometer you will use it for everything.

If the MK4 is a little too pricey for you, they also offer a great affordable instant read thermometer with the Thermapop that has a 3-4 second reading time!

Once the wings hit the perfect temperature you can remove them from the grill and serve, no need to re-dip in sauce.

These are some sweet and spicy wings.  The other added benefit of using the preserves is that it is a bit chunky and adds nice texture to the wings and sauce.  Next time you need an appetizer try these wings.

  • 1 tsp cayenne pepper add as much as you like, this adds to the upfront heat
