It is spring and I am stuck in a tropical drink grind. Every new cocktail that I think up is tropical in style. I guess I am hoping that one of these drinks takes me back to an island. Either way, today’s drink is awesome. It is heavy on pineapple and coconut like a pina colada, but with a nice blue flair.
Blue Hawaiian
On the Rocks
This cocktail can be made on the rocks or blended. I prefer it on the rocks. Mix all of the ingredients in a nice glass filled with ice.
Garnish with a mini-parasol, pineapple and a cherry.
Frozen
Mix all of the ingredients in a blender with 1 cup of ice. Blend until smooth and then pour into a nice tall glass.
Garnish with a mini-parasol, pineapple and a cherry.

This reminds me of a "hunch punch" style drink that we did with grain alcohol, blue curacao, lemonade and oranges called Blue Whales. Boy those were the days!

I remember when I bought my Party Bullet so I could make drinks like this whenever I wanted. Unfortunately, the novelty wore off. This recipe, however, makes me want to bring it out again.
