Grilled Vodka Lemonade Spritzer

I love a nice cocktail.  It has been a while since I have made a cocktail for the blog, but I figured this would be the perfect summertime drink.  Grilled lemonade, vodka and splash of seltzer makes this a refreshing cocktail for those hot summer nights.

The Lemonade

The basis of the lemonade is simple syrup.  Basically add 1 cup sugar and 1 cup of water to a saucepan.  Turn the heat to low and stir constantly until the sugar dissolves completely.  Once the sugar is dissolved, remove from the heat and you are ready to make lemonade.

Side Note – This stuff is like super glue if you spill it.  Super sticky stuff.  I lost a flip flop to this so watch out!

Preheat your grill to high.  If using charcoal make sure it is a hot fire.

Cut three lemons in half.

Sprinkle 1/2 cup sugar on a plate and then place the lemons cut side down on the plate.  Coat the cut side of the lemons with sugar.

Place the lemons cut side down on the grill.

Grill for 2-3 minutes until the lemons are caramelized.

Remove the lemons from the grill and squeeze them over strainer into a bowl or measuring cup.  Heating the lemons makes them super easy to squeeze.  Watch out for hot flying lemon juice.

Add 1/2 cup of the simple syrup to the juice and you have some mighty fine lemonade.

The Cocktail

Fill a tall glass with ice.  Fill the glass half full with the lemonade.  Then add two shots of vodka.  Top the glass off with sparkling water or seltzer and you have the most refreshing cocktail of the year.

This drink is awesome!

You can vary the sweetness of the drink by adding or subtracting the simple syrup from the lemonade.  If you make it with 1/4 cup of simple syrup you get a nice tart cocktail.  I enjoyed this, but Dana really liked it sweet.

    Vodka Lemonade is our "go to" beach drink. It keeps perfectly in an insulated cooler (Thermos). Ice and personal mugs are all you need to add.
