The Best Meatloaf

Dana and I love meatloaf.  Meatloaf is a delicious dish that is savory and rustic all in one.  We have been experimenting with various Meatloaf Recipes and this is quite possibly the best meatloaf recipe I have ever tasted.  The meatloaf was moist, tender and delicious.  Sometimes when you make/order meatloaf, you get a brick of meat.  This is not that meatloaf.

The Best Meatloaf

Prepare the loaf

Preheat your oven to 350 degrees.  Cover a jelly roll pan/cookie sheet with parchment paper and set aside.

In a large bowl mix together the Parmesan Cheese, milk, egg, salt, pepper, black pepper, dried parsley, thyme, granulated garlic, onion and bread crumbs.

Add the ground beef and mix lightly with your hands.  Mix just until the pre-mixed ingredients are fully dispersed into the ground beef.

Using your hands form the meatloaf into a nice oval loaf.   Make sure to lightly form the loaf and not to press it too hard.

Place the loaf on the parchment lined pan.

Prepare the Topping

In a small bowl, mix together the ketchup, brown sugar, mustard and cider vinegar.

Pour the topping over the formed loaf.

Cooking the Meatloaf

Place the loaf in the preheated 350 degree oven for 1 hour 20 minutes or until the center of the loaf reads 155 degrees.

Remove the loaf and let it sit for 10 minutes.

Slice and serve.

The Best Meatloaf
  • 2 Pounds Ground Beef
  • 1 Cup Parmesan Cheese
  • 1 Cup Milk
  • 2 Eggs

  • 1/4 tsp Black Pepper
  • 1/4 tsp Seasoned Salt
  • 2 tbs Dried Parsley
  • 1/2 tsp thyme
  • 1/2 tsp granulated garlic
The Best Meatloaf Topping
  • 1 cup Ketchup
  • 1/3 cup Brown Sugar
  • 1 tbs Apple Cider Vinegar
  • 1 tsp Prepared Mustard

  • I bought some ground beef to grill hamburgers, but my plan was rained out. Soooo, I had to quickly come up with another dinner, thought meatloaf, and being a horrible cook, went to my kitchen guru, Rex! The recipe was very easy to follow, thanks to the great pics. I did not have any apple cider vinegar, so I substituted with balsamic but everything else was on hand. 2 hours later, my husband was happy as a lark. He went back for seconds and then thirds!! Great recipe Rex! I am sure I'll be making this meatloaf regularly. Thanks for making me look like a rock star in the kitchen!!!
