Living in the South, I have come to love a good biscuit. A nice flaky biscuit that is on the verge of being too salty, but is just right. Mmm, my mouth is watering just thinking about it. My son Liam asked me to make biscuits, so I decided to have a go at it. The results were awesome! These were some of the best biscuits I have had. Definitely the best biscuit I have ever made.
Preheat your oven to 400 degrees Fahrenheit.
In a large bowl, combine the flour, salt, sugar, baking soda and baking powder.
Add the ice cold butter and cut it in using a pastry blender or knife. Blend in the butter until you get pea sized pieces. This will take a couple of minutes.
Create a well in the center of the flour mixture and add the butter milk. Fold in the flour to incorporate the mixture. You can use a spatula or your hands. I prefer using my hands.
Once the dough has come together, pour it out onto a floured surface. Roll out the dough into a uniform height, about 3/4 inch tall. Then using a floured biscuit cutter cut into 12 biscuits. You will have to re-roll the dough to get all 12 biscuits. If you don’t have a biscuit cutter you can use a plastic cup. I found that a cup works great!
Place the biscuits onto a parchment lined cookie sheet and bake for 18-22 minutes or until golden brown.
Let the biscuits cool on the sheet for 1 minute before removing to a cooling rack.
These biscuits are great slathered in butter or even as a breakfast sandwich. They are the bomb!
