The basis for a majority of Italian recipes is a good marinara sauce. I have experimented and created the ultimate homemade marinara sauce. This sauce is delicious and quick to make. In less than 40 minutes you can be eating. It is tangy, but not tart. It is well balanced for everyone from kids to grandpa. It is a must have recipe for your repertoire.
The key to a great marinara is quality tomatoes, fresh onions and garlic. The best tomatoes are San Marzano tomatoes. They are ripe and sweet. Plus, since they are canned within hours of being picked they are always the best tasting tomatoes available, even outside of the normal growing season. Therefore, you can make sauce all year round.
Finely dice 1/2 and onion and mince 2 cloves of garlic.
Heat a large saucepan over medium heat and add the olive oil, onions and garlic.
Sweat the onions and garlic for 3 minutes or until they start to turn translucent.
Then add the tomato sauce, tomato paste, dried parsley, dried oregano, salt, sugar and black pepper.
Mix well and then simmer for 30 minutes.
Remove from the heat and serve.
