I love tomatoes! I am the weird guy at parties that eats the cherry tomatoes in the vegetable tray. It seems as if I am the only person that eats them. So I decided to grill some up as a side dish. They were delicious! They were a tad bit tart from the balsamic vinegar making them a great side dish to accompany any grilled meat.
Marinated and Grilled Cherry Tomatoes
Rinse 1 lb of cherry tomatoes.
In a medium bowl combine the balsamic vinegar, olive oil, garlic, thyme, oregano, salt and pepper. Add the cherry tomatoes and mix.
Allow the cherry to marinate for at least 20 minutes at room temperature. Mix every 5-8 minutes.
After 20 minutes, skewer the tomatoes.
Preheat the grill to medium/high heat.
Grill the tomatoes over direct heat until they blister and start to pick up grill marks. Roughly 3-4 minutes per side.
Remove and serve.
