Grilled Marinated Cherry Tomatoes

A nice tangy side dish that is a perfect accompaniment to any grilled meat dish.

Ingredients

  • 1 lb cherry tomatoes
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic
  • 1 tsp thyme
  • 1/2 tsp oregano
  • pinch salt
  • pinch pepper

Instructions

  • Rinse 1 lb of cherry tomatoes.
  • In a medium bowl combine the balsamic vinegar, olive oil, garlic, thyme, oregano, salt and pepper. Add the cherry tomatoes and mix.
  • Allow the cherry to marinate for at least 20 minutes at room temperature. Mix every 5-8 minutes.
  • After 20 minutes, skewer the tomatoes.
  • Preheat the grill to medium/high heat.
  • Grill the tomatoes over direct heat until they blister and start to pick up grill marks. Roughly 3-4 minutes per side.
  • Remove and serve.
