The other week I went into the local super market and found some Sirloin Tips on sale. I love sirloin tips. They are tender and delicious! I have been extremely busy, so I figured I would experiment with making them in the crock-pot. That way I can enjoy some delicious Sirloin Tips with mushrooms without much effort.
Slice the Sirloin Tips into large cubes.
Preheat a pan over medium/high heat. Add the sirloin tips to the pan and brown. Unless you have a gigantic pan, I would do this in batches so that the meat browns evenly.
While you are browning the meat. Dice up the onions and garlic.
When the meat is fully browned add it to the crock pot along with the onions and garlic.
Slice the mushrooms and add them to the crock pot.
Add two cans of cream of mushroom soup, 1 bag of lipton onion soup mix and 2 cans of beef broth.
Cook for 8 hours on low.
In the last hour of cooking, mix two tablespoons of cornstarch into 1/4 cup of cold water. Then add it to the crock pot. This will thicken the sauce. If you wish to have a thinner sauce, you can skip this step.
Serve over mashed potatoes, rice or my favorite, egg noodles.

If you add sour cream instead of the cornstarch, would that make it thick enough?
Marilyn, I am not sure. Maybe the sour cream and 1.5 cups of broth instead of two. I used two since i wanted to make a lot of sauce to serve it over noodles.
I think this is a perfect reason for me to make them again. Haha. I am always looking for a reason to make recipes again.

I have to try this out. I'm going to do more slow cooker stuff this fall when the daylight scampers away before we get home.
I love the ease of a slow cooker. It makes everything so easy when things are chaotic around the house. Set it and forget it.
