Ingredients

potatoes
peeled and quartered
1/2
cup
butter
1/2
cup
heavy cream
4
oz
goat cheese
Salt and pepper to taste
Instructions
Peel and quarter the potatoes. Place them in a large pan and cover them with water.
Bring to a boil and continue to boil until tender, roughly 20-25 minutes.
When the potatoes are done, drain them carefully.
Add butter, heavy cream, and goat cheese to the hot potatoes. Season with salt and pepper to taste.
Mash with a potato masher until desired consistency. Keep some lumps to show real potatoes.
Notes
Pairs perfectly with braised short ribs and their gravy. Hand-mashing keeps nice texture with lumps.
