Ingredients

  • 3 lbs potatoes peeled and quartered
  • 1/2 cup butter
  • 1/2 cup heavy cream
  • 4 oz goat cheese
  • Salt and pepper to taste

Instructions

  • Peel and quarter the potatoes. Place them in a large pan and cover them with water.
  • Bring to a boil and continue to boil until tender, roughly 20-25 minutes.
  • When the potatoes are done, drain them carefully.
  • Add butter, heavy cream, and goat cheese to the hot potatoes. Season with salt and pepper to taste.
  • Mash with a potato masher until desired consistency. Keep some lumps to show real potatoes.

Notes

Pairs perfectly with braised short ribs and their gravy. Hand-mashing keeps nice texture with lumps.
