Ingredients

  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • Pinch of cinnamon
  • Pinch of nutmeg

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Wash the sweet potatoes thoroughly under running water.
  • Coat the potatoes evenly in olive oil.
  • Top each potato with 1 teaspoon of kosher salt.
  • Place potatoes salt side up on a baking sheet and bake for 35-45 minutes, depending on size, until a fork can be easily inserted.
  • Remove from oven when fork-tender.
  • Cut a slit halfway through each potato.
  • Insert 1 tablespoon of butter into the slit of each potato.
  • Top each potato with 1 tablespoon of brown sugar.
  • Sprinkle a pinch of cinnamon and nutmeg on each potato.
  • Return potatoes to oven for another 5-10 minutes, until the butter and brown sugar melt completely.
  • Serve immediately as a side dish.

Notes

The size of your sweet potatoes will affect baking time. Choose potatoes of similar size for even cooking. These pair wonderfully with holiday meals.
