Blue Cheese Filets

Tender filet mignon topped with creamy blue cheese. Quick and easy broiler method produces perfectly cooked steaks with melted gorgonzola.

Ingredients

  • 2 Filet Mignon steaks
  • 1/4 cup blue cheese mild Gorgonzola recommended
  • Salt to taste
  • Pepper to taste

Instructions

  • Preheat broiler to high. If using electric oven, move rack to top position. If gas oven, prepare to work near the floor.
  • Season filets with salt and pepper. Place on a broiler pan, or use a cooling rack on a cookie sheet as an alternative.
  • Place pan in oven with meat about 2-3 inches from the heat source.
  • Cook for 3-5 minutes depending on desired doneness. Flip and cook the other side for 3-5 minutes.
  • When steaks are almost done, remove pan from oven. Flip meat one last time and top with blue cheese.
  • Return to oven for 30 seconds to 1 minute until cheese melts and starts to brown.
  • Remove filets from oven and let rest for 3-5 minutes before serving.

Notes

The broiler is an excellent alternative to grilling when weather doesn't cooperate. Use a thermometer for precise doneness: 125°F for rare, 135°F for medium-rare, 145°F for medium.
