Spicy buffalo-seasoned burger patties served with oven-roasted sugar snap peas.

Ingredients
1.5lbsground buffalo meat
Salt and pepper to taste
1quartsugar snap peas
2shallotsfinely diced
3clovesgarlicfinely diced
1/4cupolive oil
Handful of fresh thyme
1/2teaspoonsalt
1/4teaspoonpepper
4burger buns or french bread
Instructions
Preheat oven to 425°F.
Wash sugar snap peas and snap off stems. Spread on parchment-lined baking sheet.
Finely dice shallots and garlic. Pull thyme leaves from stems.
Drizzle olive oil over peas. Spread shallots, garlic, and thyme over everything.
Season peas with salt and pepper. Roast in oven for 10 minutes.
Form buffalo meat into 4 patties. Season each side with salt and pepper.
Place on preheated grill (medium-high). Flip when juices bubble through (4-5 mins for medium, 6-7 for well).
After flipping, cook 3-4 more minutes (medium) or 5-6 (well). Cover with cheese if desired.
Serve on toasted buns with roasted peas on the side.
Notes
Buffalo meat is lean and tasty—it needs minimal seasoning. Peas should be tender and slightly charred. Do not toast french bread or it becomes too tough to eat.
