Cheese Stuffed Bacon Wrapped Hot Dogs

Grilled hot dogs stuffed with Swiss cheese and wrapped in thick-cut bacon. Cooked over indirect heat for a crispy bacon exterior and creamy cheese center.

Ingredients

  • 4 all-beef natural casing hot dogs
  • Swiss cheese slices
  • 8 strips thick-cut bacon
  • 8-12 toothpicks

Instructions

  • Cut a slit in each hot dog about 3/4 of the way through.
  • Stuff as much Swiss cheese as you can into the slit in each hot dog.
  • Wrap each hot dog with bacon. Start at one end and anchor the bacon with a toothpick.
  • Wrap the bacon around the hot dog. When bacon starts to run out, add another piece of bacon and use a single toothpick to hold both pieces in place.
  • Use another toothpick at the other end to hold the bacon in place.
  • Preheat half of the grill to medium-high heat.
  • Place the hot dogs over indirect heat (the unheated side of the grill).
  • Rotate the dogs every 4-5 minutes.
  • Cook for about 20 minutes total until bacon is crispy and cooked through.
  • Serve on hot dog buns with your favorite toppings. Mustard is recommended.

Notes

Cooking over indirect heat is key to getting crispy bacon that is cooked all the way through. Direct heat would cook the outside while leaving the inside raw. The whole process takes about 20 minutes but is worth every minute. Watch for cheese leaking out during cooking.
