Garlic and Herb Roasted Potatoes

Crispy on the outside and tender on the inside, these garlic and herb roasted potatoes are the perfect side dish. Tossed with fresh rosemary, thyme, and garlic for amazing flavor.

Ingredients

  • 2 lbs potatoes cut into bite-sized pieces
  • 6 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  • Preheat oven to 400°F.
  • Toss potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper in a large mixing bowl.
  • Spread mixture evenly on a sheet pan.
  • Roast for 40-45 minutes, stirring occasionally, until potatoes are crispy on the outside and tender inside.
  • Remove from oven and serve immediately.

Notes

Fresh herbs make a huge difference in this recipe. Don't substitute dried herbs if possible. For extra crispiness, cut potatoes slightly smaller and increase roasting time by 5-10 minutes.
