Garlic Bread Revisited

Crispy, crunchy garlic bread stuffed with melted mozzarella cheese. Made with fresh garlic butter and a rosemary herb bread, finished with a quick broil for perfect golden cheese.

Ingredients

  • 1 round of rosemary herb bread
  • 6 cloves garlic
  • 1/4 cup spreadable butter
  • 8 slices mozzarella cheese
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F.
  • Finely mince garlic using a microplane. Add spreadable butter to a bowl with salt and pepper.
  • Mix until garlic is completely incorporated into the butter.
  • Cut the bread round into slices, cutting about 90% of the way through but not all the way through.
  • Slather the inside of each slice with the garlic butter.
  • Place mozzarella cheese slices into the cuts in the bread. Break cheese slices in half if needed. It's fine if cheese sticks out the top.
  • Place the bread round on a cookie sheet and bake for 20 minutes at 400°F.
  • Switch oven to broil and place under the broiler for 1-2 minutes until cheese bubbles and turns brown.
  • Remove from oven, break at the cuts, and serve immediately.

Notes

Using a microplane grater makes mincing garlic very easy and gives a fine texture. The key to this recipe is not cutting all the way through the bread so it stays together while serving. Fresh rosemary herb bread works best for flavor.
