Guacamole

Ingredients

  • 3 avocados halved, seeded and peeled
  • 1 lime juiced
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne
  • 2 Plum tomatoes seeded and diced
  • 1 small onion diced
  • 1/2 jalapeno pepper seeded and minced
  • 1 tbs chopped cilantro
  • 1 clove garlic minced

Instructions

  • In a large bowl scoop out the avocado pulp. Then stir in the dried spices (salt, cumin and cayenne) and then mash it all together with a potato masher.
  • Juice a lime and pour it over mashed avocado. Fold it in. This will prevent the avocado from turning brown. Drain the excess lime juice from the avocado and reserve it.
  • Dice up the onion, tomatoes and seeded jalapeno. Add it to the avocado mixture. Then mince garlic and the cilantro and add it to the mixture. Stir.
  • Then add 1 tbs of the lime juice to the guacamole and stir.
  • Let the guacamole sit at room temperature for an hour to let the flavors meld. Serve with your favorite tortilla chips or alongside your favorite Tex-Mex.
