Homemade Dumpling Noodles
Fresh egg noodles made from scratch and shaped into dumplings for soups.

Ingredients

all-purpose flour
1/2
cup
milk
2
eggs
1
tablespoon
butter
melted
1
teaspoon
salt
Instructions
In large bowl combine flour and salt. In medium bowl combine milk, egg, and melted butter. Whisk to combine.
Make a well in flour and add egg mixture. Stir until dough forms a ball.
Turn out onto floured surface and knead until smooth (about 5 minutes).
Place dough back in bowl, cover with plastic wrap, and let rest 10-15 minutes.
Roll dough out to 1/4 inch thickness and cut into desired noodle shapes.
Hang noodles over skewer or lay on cooling rack to air dry for 20 minutes.
Cook in salted boiling water for 3-5 minutes until desired doneness.
Notes
Fresh noodles are best used fresh. You can cut into 2-3 inch pieces for soups. Perfect for dumpling noodle soups.
