Homemade Dumpling Noodles

Fresh egg noodles made from scratch and shaped into dumplings for soups.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup milk
  • 2 eggs
  • 1 tablespoon butter melted
  • 1 teaspoon salt

Instructions

  • In large bowl combine flour and salt. In medium bowl combine milk, egg, and melted butter. Whisk to combine.
  • Make a well in flour and add egg mixture. Stir until dough forms a ball.
  • Turn out onto floured surface and knead until smooth (about 5 minutes).
  • Place dough back in bowl, cover with plastic wrap, and let rest 10-15 minutes.
  • Roll dough out to 1/4 inch thickness and cut into desired noodle shapes.
  • Hang noodles over skewer or lay on cooling rack to air dry for 20 minutes.
  • Cook in salted boiling water for 3-5 minutes until desired doneness.

Notes

Fresh noodles are best used fresh. You can cut into 2-3 inch pieces for soups. Perfect for dumpling noodle soups.
