Mexican Fried Rice

Ingredients

  • 3 cups cooked rice
  • 12 oz can tomato sauce
  • 2, 3 oz cans green chiles
  • 2 tbs fajita seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper

Fajita Seasoning

  • Chicken Fajita Dry Rub
  • 3 tbs paprika
  • 2 tbs chili powder
  • 1 tbs sugar
  • 1 tbs garlic powder
  • 3 tsp salt
  • 2 tsp onion powder
  • 2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp chipoltle pepper ground

Instructions

  • Preheat a griddle, large frying pan or wok over high heat.
  • Add the oil. When the oil starts to shimmer, add the cooked rice.
  • Cook for a minute or two. Then add the tomato sauce and green chiles.
  • Continue to cook and then add the fajita seasoning, salt and pepper.
  • Cook until the rice starts to crisp up and then serve.
