Poutine

Classic Canadian poutine with crispy fries, squeaky cheese curds, and rich beef gravy. Perfect appetizer or side dish.

Ingredients

  • 2 large russet potatoes
  • 6 oz fresh cheese curds white or yellow
  • 16 oz beef broth or stock
  • 1 oz butter
  • 1 oz flour
  • Salt and pepper to taste
  • Oil for deep frying

Instructions

  • Make the gravy: Place butter and flour in a saucepan and stir for 6-8 minutes until brown roux forms.
  • Add beef broth and bring to a boil. Season with salt and pepper.
  • Reduce heat and simmer for 20-25 minutes until gravy thickens.
  • While gravy simmers, peel and cut potatoes into thick strips. Place in cold water.
  • Heat oil in deep fryer to 320°F. Blanch potatoes for 3-4 minutes to cook centers.
  • Remove fries and drain on paper towels.
  • Increase oil temperature to 375°F. Fry potatoes until crisp, about 4-5 minutes.
  • Drain fries and season with salt and pepper. Place on serving dish.
  • Cover fries with cheese curds.
  • Ladle hot gravy over fries and cheese curds. Serve immediately.

Notes

For best results, use fresh squeaky cheese curds. The two-stage frying process creates perfectly crispy fries with cooked centers.
