Poutine
Classic Canadian poutine with crispy fries, squeaky cheese curds, and rich beef gravy. Perfect appetizer or side dish.

large russet potatoes

fresh cheese curds
white or yellow

beef broth or stock

butter

flour
Salt and pepper to taste
Oil for deep frying
Instructions
Make the gravy: Place butter and flour in a saucepan and stir for 6-8 minutes until brown roux forms.
Add beef broth and bring to a boil. Season with salt and pepper.
Reduce heat and simmer for 20-25 minutes until gravy thickens.
While gravy simmers, peel and cut potatoes into thick strips. Place in cold water.
Heat oil in deep fryer to 320°F. Blanch potatoes for 3-4 minutes to cook centers.
Remove fries and drain on paper towels.
Increase oil temperature to 375°F. Fry potatoes until crisp, about 4-5 minutes.
Drain fries and season with salt and pepper. Place on serving dish.
Cover fries with cheese curds.
Ladle hot gravy over fries and cheese curds. Serve immediately.
Notes
For best results, use fresh squeaky cheese curds. The two-stage frying process creates perfectly crispy fries with cooked centers.
