Ingredients

  • 28 oz can of whole tomatoes
  • 1 medium onion
  • 5 cloves of garlic
  • 2 teaspoons dried oregano or 1 tablespoon fresh
  • 2 teaspoons dried basil or 1 tablespoon fresh
  • 2-3 tablespoons olive oil
  • Salt and pepper to taste
  • 1-2 teaspoons red pepper flakes optional, for heat

Instructions

  • Grab a sauce pan and place on medium-high heat.
  • Add olive oil until the bottom of the pan is covered.
  • Sweat the onions until translucent.
  • While the onions are sweating, open the can of whole peeled tomatoes.
  • For a chunky sauce, pour the tomatoes into a bowl and roughly chop them with a fork, potato masher, or dough blender.
  • For a smooth sauce, pour the tomatoes into a blender or food processor and blend them up.
  • Check on your onions. When they are looking transparent, add the garlic.
  • Let the garlic simmer for a minute, then add the remaining ingredients (tomatoes, oregano, basil, salt, pepper, and red pepper flakes if desired).
  • Let simmer for 5-10 minutes.
  • Serve with pasta, as a pizza sauce, or over eggs and potatoes.

Notes

This quick sauce is ready in just 15 minutes. Choose between chunky or smooth sauce depending on your preference. Add red pepper flakes if you like it hot. Works great on pasta, pizza, eggs, and potatoes.
