Steak Burrito Bowl

Ingredients

  • 1 lb skirt steak
  • 3 cups cilantro lime rice
  • 5 tbs fajita seasoning
  • 2 tbs olive oil
  • 1 cup Monterrey Jack Cheese
  • 1 cup fresh salsa
  • 1 cup guacamole
  • 1 cup sour cream
  • 1 can black beans

Instructions

  • Add the skirt steak into a zip top bag. Add 2 tbs olive oil and 3 tbs fajita seasoning. Mix to coat the skirt steak and then allow it to marinate in the refrigerator for at least 1 hour.

Black Beans

  • Pour the black beans into a saucepan. Add 1 tbs fajita seasoning and stir. Heat until warm and set aside.

Fajita Steak

  • Preheat the grill to medium high heat. Roughly 350 degrees when the lid is closed.
  • Place the steak directly over heat and cook for about 4-6 minutes per side or until an internal temperature of 145 degrees. The timing will depend on the thickness of the skirt steak.
  • Once the steak is cooked, remove from the heat and let it rest for 5 minutes before dicing.

Assembling the burrito bowl

  • In a large bowl add 3/4 cup of cilantro lime rice.
  • Then top with 1/4 cup of the black beans.
  • Next top with 1/2 cup of the Fajita Steak.
  • Top with 1/4 cup of salsa.
  • Next add 1/4 cup of cheese and 1/4 cup of guacamole. You can also add a dollop of sour cream if you wish.
  • Serve and enjoy.
