Strawberry Sodas
A classic old-fashioned ice cream soda made with fresh strawberries, homemade strawberry syrup, vanilla ice cream, and soda water. Layered and topped with whipped cream, this refreshing drink takes you back to the soda fountain.

1 Sauce Pan
2 Parfait Cups or Mugs
For Strawberry Syrup:
- 1 lb strawberries
- ½ cup corn syrup
- 3 tbsp sugar
- Pinch of salt
For Assembly:
- Strawberry syrup from above
- Vanilla ice cream
- Soda water
- Whipped cream
Make the Syrup:
Blend strawberries, sugar, and salt in a blender until liquified
Transfer to a saucepan and add corn syrup
Bring to a boil
Reduce heat and simmer for 20-30 minutes until reduced by a third
Chill for at least 30 minutes before serving (optional: strain through a sieve to remove seeds)
Assemble the Soda:
Pour 2 tbsp strawberry syrup into the bottom of a parfait cup or mug
Add some cut-up fresh strawberries
Top with a scoop of vanilla ice cream
Repeat layers: syrup, strawberries, and ice cream
Add one more spoonful of syrup on top
Fill the glass with soda water
Top with whipped cream and a drizzle of syrup
Serve immediately
- The syrup needs to be made at least 30 minutes ahead of time to chill properly
- Strawberries have a lot of water content, so it takes 20-30 minutes of simmering to reduce the mixture properly
- You can strain the syrup through a sieve to remove seeds if you prefer a seedless version
- The syrup should be quite sweet since it gets diluted when you add soda water
- Layer the ingredients to create a visually appealing drink
- Serve immediately after adding soda water for the best carbonation
