Ingredients

  • 4 baking potatoes
  • 1 cup leftover gravy plus extra for drizzling
  • 1 cup leftover stuffing herb stuffing recommended
  • 1 cup leftover turkey
  • 1 cup leftover vegetables green bean casserole, corn, broccoli, etc.
  • 1 cup cheddar cheese sharp cheddar preferred

Instructions

  • Bake the potatoes for 45-60 minutes in a 350°F oven until almost fully cooked.
  • Remove from oven and let cool for 5 minutes.
  • Once cooled, cut potatoes in half and scoop out the middle to form a boat shape, leaving about ¼ inch of potato on the skin. Save scooped insides for breakfast potatoes.
  • Layer the skins with turkey and gravy.
  • Top with leftover stuffing.
  • Add any leftover vegetables.
  • Top with sharp cheddar cheese.
  • Place back in 350°F oven for 12-15 minutes until cheese melts and starts to brown.
  • Serve with extra gravy on the side.
