Ingredients
  • 2 lb Eye of round roast
  • 3 tbs Flour
  • 1 tsp Salt
  • 1/2 tsp Flour
  • 2 tbs Vegetable oil
  • 1/2 cup Water
  • 2 Beef bouillon cubes
  • 2 tbs Rex's Roast beef rub (See website for recipe)
Instructions
  1. In a small bowl mix the flour, salt and pepper. Then, coat the eye of round in the flour mixture.

  2. Preheat a pan over medium/high heat and add the vegetable oil.
  3. Sear the coated eye of round on all sides until brown.

  4. Add the seared eye of round to a crock pot / slow cooker.

  5. Then, add the water and bouillon cubes.

  6. Sprinkle the eye of round roast with the roast beef rub.
  7. Set the crock pot to low and cook for 8 hours.
  8. Remove the roast from the crock pot, cover loosely with foil and allow to rest for 15 minutes on a cutting board.
  9. Serve and enjoy.
  10. Tip - you can strain the drippings into a pan and reduce on low until you reach your desired thickness.
