Slow Cooker Eye of Round Beef Roast

This is a great recipe for a hearty, savory family meal!

Who doesn’t love the wonderful smell of a beef roast cooking on a Sunday? My wife’s family loves to enjoy a Sunday dinner together and this meal fits the bill perfectly. This hearty roast recipe will satisfy every meat lover’s cravings! We like to pair this roast with some yukon gold mashed potatoes and sweet corn. DE-LISH.

Let’s get started on this recipe!

In a small bowl mix the flour, salt and pepper.  Then, coat the eye of round in the flour mixture. Preheat a pan over medium/high heat and add the vegetable oil. Sear the coated eye of round on all sides until brown.

Add the seared eye of round to a crock pot or slow cooker. Then, add the water and bouillon cubes.

Sprinkle the eye of round roast with my Roast beef rub (Rex’s Beef Roast Rub).

Set the crock pot to low and cook for 8 hours. Remove the roast from the crock pot, cover loosely with foil and allow to rest for 15 minutes on a cutting board. Serve and enjoy.

Pro Tip – you can strain the drippings into a pan and reduce on low until you reach your desired thickness for a nice gravy.

  • 2 lb Eye of round roast
  • 3 tbs Flour

  • 2 Beef bouillon cubes

Instructions

  7. Set the crock pot to low and cook for 8 hours.
  8. Remove the roast from the crock pot, cover loosely with foil and allow to rest for 15 minutes on a cutting board.
  9. Serve and enjoy.
  10. Tip – you can strain the drippings into a pan and reduce on low until you reach your desired thickness.
