Ingredients

  • 2 pounds ground beef 80/20
  • 2 large onions chopped
  • 1 small can tomato paste 6 oz
  • 4 tablespoons hot chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon sugar
  • 1 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cinnamon
  • 1.5 tablespoons apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 4 cups water
  • 2 tablespoons vegetable oil

Instructions

  • Place a large pot or dutch oven over medium-high heat. Add vegetable oil and then add chopped onions.
  • Season onions with a pinch of salt and cook until translucent.
  • Add ground beef and continue cooking until meat is fully browned.
  • Remove 80-90% of the meat to a blender or food processor.
  • Add two cups of water to the blender with the meat and blend for 4-5 pulses (or blend all meat if you prefer no lumps).
  • Pour the meat mixture back into the pot.
  • Add remaining two cups of water to the pot.
  • Add all remaining ingredients: tomato paste, chili powder, garlic powder, sugar, allspice, salt, cayenne pepper, smoked paprika, cinnamon, apple cider vinegar, and Worcestershire sauce.
  • Bring to a boil, then reduce heat and simmer for 2-3 hours until chili thickens and cooks down.
  • Serve over hot dogs, macaroni, or as desired.

Notes

The key to authentic Coney Island chili is getting the meat to the right finely-ground consistency. Blending some of the cooked meat with water creates the signature texture. This chili pairs perfectly with mustard and fresh onions on hot dogs, or mixed into macaroni and cheese.
