Grandma Donna's Chicken Chili

Simple white chicken chili with great northern beans, salsa, and Monterrey Jack cheese. Perfect comfort food.

Ingredients

  • 2 pounds chicken breasts
  • 3 14-15 oz cans great northern beans
  • 1 16 oz jar salsa
  • 2 tsp cumin
  • 2 cups Monterrey Jack cheese
  • 2 tbs olive oil

Instructions

  • Dice up the chicken into cubes.
  • Saute in 2 tbs olive oil in a large pan.
  • When the chicken is fully cooked, add the 3 cans of great northern beans (do not drain).
  • Add the jar of salsa and 2 tsp of cumin.
  • Bring to a boil and then reduce temperature to low and let simmer for 20 minutes.
  • Remove the pan from heat and stir in the cheese.
  • Serve in large bowls and top with cheese, sour cream, tortilla chips, saltines, or cornbread.

Notes

Pick your preferred salsa spiciness (mild, medium, or hot). You can top with cheese, sour cream, tortilla chips, saltines, or cornbread.
