My Grandma Donna would always make me Chicken Chili when I would visit her. It was extremely tasty and included only a handful of ingredients. Since it has been getting colder around here I decided to make some.Grandma Donna's White Chicken ChiliTop with a little cheese and this chili is amazing!!Dice up the chicken into cubes. Saute in 2 tbs olive oil in a large pan. When the chicken is fully cooked add the 3 cans of great northern beans. Make sure to not drain the beans. Add the beans and the liquid from the can.Add the beans without draining themAdd the jar of salsa and 2 tsp of cumin. Bring to a boil and then reduce temperature to low and let simmer for 20 minutes.I used a hot and spicy salsa to add a little heat, but you can use mild or medium.Remove the pan from the heat and stir in the cheese.Serve the chili in a large bowl and top with cheese, a dollop of sour cream, tortilla chips, saltines or even freshly baked corn bread.Top with anything you like, I like just a tad bit more cheeseThis recipe is so simple but the results are great. It tastes awesome!!— Rex

So I have been trying to perfect ribs for a while. I am always on the lookout for new techniques or tools to make the perfect competition rib. Well I went back to basics and scored with an amazing rib. The key was a nice rub and a finely tuned barbecue smoker. The final ribs…
Over the past month I had some ups and downs. I had a pipe leak in my house and my first floor had to be gutted. Hence, no new recipes lately. However, I also competed in my first barbecue competition. 39th out of 113. Not too shabby. During that contest I was interviewed by HotSauceWeekly.com. …
Last weekend Dana and I were out running errands and decided to hit up Cracker Barrel for breakfast. Along with every meal, they serve fried apples. I was mesmerized by the tasty apple goodness. I had to make these for myself. So I scoured the internet to see if anyone has tried these and there were…
Ever since I found the pressure cooker in our garage, I have been thinking of various dishes to make with it. So when I went to the store and found that short ribs were on sale, I knew I needed to make short ribs. Braising short ribs takes forever. At least 3 hours at a minimum. But with a pressure cooker, these short ribs are done in about an hour and they’re absolutely awesome.
Last week I met up with my friend from college Justin. He invited me to go and brew beer over at Shenandoah Brewery. Basically it is a brew your own beer brewery. They had 8-10 steam kettles and a ton of recipes. We decided to Hellesfest. Basically it is a 9% alcohol Ocktoberfest Lager. Pretty…
It is really easy to make. It is almost so simple that you would think that it wouldn't have much flavor. It is super tasty. You could add all of the ingredients for salsa separately, but this is a quick and tasty meal. I actually had leftovers of it today with Fritos in it. Awesome!!
Rex, that is so simple, I love it! This is one that would be easy for having my youngest son help me make.
