My Grandma Donna would always make me Chicken Chili when I would visit her. It was extremely tasty and included only a handful of ingredients. Since it has been getting colder around here I decided to make some.Grandma Donna's White Chicken ChiliTop with a little cheese and this chili is amazing!!Dice up the chicken into cubes. Saute in 2 tbs olive oil in a large pan. When the chicken is fully cooked add the 3 cans of great northern beans. Make sure to not drain the beans. Add the beans and the liquid from the can.Add the beans without draining themAdd the jar of salsa and 2 tsp of cumin. Bring to a boil and then reduce temperature to low and let simmer for 20 minutes.I used a hot and spicy salsa to add a little heat, but you can use mild or medium.Remove the pan from the heat and stir in the cheese.Serve the chili in a large bowl and top with cheese, a dollop of sour cream, tortilla chips, saltines or even freshly baked corn bread.Top with anything you like, I like just a tad bit more cheeseThis recipe is so simple but the results are great.
