Creamy Potato Salad

  • The perfect side dish for barbecue, sandwiches, pork, or any picnic is Potato Salad.  My Grandma Dot has a great recipe for potato salad.  So, I called up my Mom this weekend for the recipe and instructions for Grandma’s perfectly creamy potato salad.

Perfect Potato Salad

The perfect potato salad takes at least 6 hours to make.  So if you are in a rush, you might want to go to the deli counter and just get some there.  But, trust me.  If you have time this recipe is totally worth it. 

Ingredients (from Grandma Dot)

  • 5 lbs of potatoes
  • 6 large eggs
  • 1.5 tbs of celery seed
  • 2 tbs freshly grated or finely diced onion
  • 1.5 cups of miracle whip
  • 3/4 cup of mayo
  • 2 tbs prepared mustard
  • 1 cup of sour cream
  • 1.5 tbs sugar
  • salt and pepper

First thing that you need to do is to Boil the Potatoes until tender and then immediately drain and rinse under cold water.  While the potatoes are still luke warm, peel them.  Once finished refrigerate peeling refrigerate. 

Next hard boil the 6 eggs.   Quick tip, Start with the eggs in cold water bring to boil and immediately turn off the heat.  Let the eggs set on burner in the water for 20 minutes and then rinse in cold water and peel.  Once finished refrigerate peeling refrigerate.  
 
My mother usually makes both the potatoes and eggs the day before she wants to make the salad

Peeled potatoes  hard boiled egg

Dice the potatoes and the egg into a large bowl.  Add 1 1/2 tablespoons of celery seed and mix well.  Try not to break up the potatoes.  Then Grate or finely dice the onion in and mix well.
 
In a separate bowl mix the miracle whip, mayo, sour cream, mustard, sugar, salt and pepper.  Mix well.  Then fold the mixture into the potato mixture.

Then let the mixture set in the refrigerator for 3 to 4 hours before eating.

Potato Salad

This makes some of the tastiest potato salad that I have ever had.  It is a tad time consuming, but well worth it.  I hope that you enjoy it.
