Macaroni Salad

When I was a kid my parents would take me to Pizza Hut for the pizza and salad bar buffet.  It was the best time as it was all you can eat breadsticks and pizza.  Before diving knee deep into the pizza I always went to the salad bar for a quick healthy snack.  That is when I fell in love with the macaroni salad.  It wasn;t like most macaroni salads.  It was full of pimentos and relish.  I have been looking for a good recipe for this type of macaroni salad for a while.  Finally my Mom and I figured out a recipe.  It is basic, but it is really good.

Delicious and simple. This reminds me of the salad that I used to eat at Pizza Hut!

Ingredients
  • 1 Pound Elbow Macaroni
  • 3/4 Cup Sweet pickle relish
  • 4 Oz Pimentos diced
  • 1 Stalk Celery finely diced
  • 1/2 Medium Onion finely diced
  • 1 1/2 Cups Mayonnaise
  • 1/2 Cup Sour Cream
  • 1 tsp sugar
  • 1/2 Cup Milk
  • 1 1/2 tsp Salt
  • 1/2 tsp Pepper
Instructions
  1. Drain and dice up the pimentos

    Add the pimentos and sweet pickle relish to a large clean bowl.

    Add the celery and oinions

    Next add the mayonnaise, sugar, sour cream and milk.  Stir the mixture until the mixture is creamy.

    Add the macaroni and mix thoroughly.  Taste and add the salt and pepper.  Refigerate for 30 minutes before serving.

    After the salad sits for at least 30 minutes, eat and enjoy!!

It is a little sweeter than most macaroni salads, that is probably why I loved it as a kid.

Next add the mayonaise and milk.  Stir the mixture until the mixture is creamy.

Mix in the mayo

Add the macaroni and mix thoroughly.  Taste and add the salt and pepper.  Refigerate for 30 minutes before serving.

After the salad sits for at least 30 minutes, eat and enjoy!!
