Homemade Super Fluffy Buttermilk Pancakes

My kids love pancakes! So, I am always experimenting with new recipes. This latest recipe was determined to be the best pancake recipe ever by my son and daughter. It is the perfect combination of buttermilk, eggs and flour. A must try!

Making the Pancake Batter

This recipe is super simple but the key is to combine the dry ingredients together in one bowl and the wet ingredients into a separate bowl.

Then, mix the two together until just combined. Do not overmix. A few lumps are just fine.

Once the two are combined, the second key is to use a griddle. You can make these on the stove, but the constant temperature of an electric or gas griddle makes them come out perfectly.

Broil King Griddle

I have a broil king griddle with a backsplash, but a basic one works just as good. After a ton of experimenting, I have found that 325 degrees is the sweet spot for the griddle temperature.

The pancakes come out golden brown and perfect every time.

When the griddle is preheated, pour out the batter into 4-5 inch circles. Cook till bubbles form on the top of the pancakes and burst without filling back in with batter. Flip and cook until golden brown on the other side.

Ingredients
Dry Ingredients
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
Wet Ingredients
  • 2 cups buttermilk
  • 2 large eggs lightly beaten
  • 1/2 tsp vanilla extract
Instructions
  1. In a large mixing bowl whisk to combine the flour, sugar, baking soda, baking powder and salt.
  2. In a separate bowl, whisk the buttermilk, eggs and vanilla.
  3. Pour the buttmilk mixture into the flour and whisk until just combined.
  4. Preheat a griddle to 325 degrees.
  5. When the griddle is preheated, pour about 1/2 cup of batter onto the griddle.
  6. When small bubbles form and pop, flip the pancakes.
  7. Cook for another minute or until the bottom is golden brown.
  8. Remove from the griddle and serve with warm maple syrup.
Recipe Notes

I have experimented and 325 degrees is the perfect temperature for making golden brown pancakes.  It is not necessary to use a griddle, but it makes life a lot easier!
