Chewy Brownies

My parents came to visit this past weekend to barbecue and hang out.  One night my Mother wanted something sweet, so I opened up the Art and Soul of Baking and found a great chewy brownie recipe.  I made them and they were a hit.  The brownies are extremely rich and can fulfill anyones sweet tooth.

Nuts and chocolate chips round out these amazing brownies.

Chewy Brownies – (from the Art and Soul of Baking)

  • 1 stick of unsalted butter
  • 4 ounces semisweet chocolate – chopped
  • 2 ounces unsweetened chocolate – chopped
  • 1 cup sugar
  • 2 large eggs – Room temperature
  • 1.5 tsp vanilla
  • 1/2 cup all-purpose flour
  • pinch of salt
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Preheat the oven to 350 degrees and line a 8×8 with parchment paper.  Grease the pan and the parchment.

Bring a couple of inches of water to boil in a double boiler or a saucepan with a high heat bowl over the top.  When the water boils remove it from the heat and place the chopped chocolate in the bowl.  Stir until the chocolate is melted and smooth.

Remove the chocolate from the water bath and whisk in the sugar.  Once the sugar is incorporated, whisk in the eggs one at a time.  Then whisk in the vanilla, flour and salt.  Continue to stir the mixture until the mixture is smooth and shiny.

Mix in the chocolate chips and chopped nuts.

Place the batter in the greased 8×8 pan and spread evenly.  Bake at 350 degrees for 35 to 40 minutes.  Cook until a toothpick can be inserted and comes out with a few crumbs clinging to it.  Let the brownies cool completely on a rack.

Cut into 16 equal pieces and enjoy.
