Pam’s Corn Casserole

My In-laws neighbor “Pam”, makes the most delicious corn casserole. It is a mixture between corn bread and spoon bread. It has little corn kernels in it too. It is freaking delicious!  I asked for the recipe and she was happy to share it. Thanks Pam! It is simple, easy and delicious! Plus, it is loaded with butter. I love butter. A must try side dish for any meal.

Pam’s Corn Casserole

Preheat your oven to 350 degrees.

In a large bowl, combine the melted butter, jiffy mix, can kernel corn, can creamed corn and sour cream.

Mix the ingredients

Spoon the mixture into a 9×13 pan.  There is enough butter in this that I have never had to grease the pan.  It has always come out perfect.

Scoop into a 9x13 pan

Place in the oven and bake for 40 to 45 minutes or until the top is golden brown and dry.

Cook till browned

Slice and serve!

Ingredients
  • 14.75 oz Creamed Corn 1 regular can
  • 8.75 oz Kernel Corn 1 small can
  • 8 oz Sour Cream
  • 1 box Jiffy Corn Bread Mix
  • 8 oz Butter, melted 1 stick
Instructions
  1. Mix the ingredients in a 9x13 pan.

  2. Cook at 350 degrees for 40-45 minutes

  3. When the top is golden brown and dry looking it is done
