Snow Day Coconut Rum Cocktail (Stuck in the Snow!)

We have been having a rough winter here in Virginia! The kids have been out of school for 3 days and it is not even winter yet. So to cope with the snow and ice I figured it was time for a snow day cocktail. This snow day cocktail is a fun play on a traditional piña colada. I have removed pineapple and added sweetened coconut for a nice little bite.Snow Day Coconut Rum CocktailIn a blender add 2/3 cup of ice, 3 ounces cream of coconut and 2 ounces Malibu Rum. Blend until smooth. This won’t be super creamy as I wanted an icee type of consistency. If you want to have a truly frozen drink add another 1/3 cup of ice.While the blender is running, coat the edge of a martini glass with some cream of coconut. Then cover the edge with sweetened coconut. I like to place 1/2 cup of sweetened coconut on a plate and then roll the coated edge of the martini glass into the coconut.Snow Day Coconut Rum CocktailPour the cocktail from the blender into the coated glass and then top with a sprinkle of sweetened coconut.Enjoy!— Rex

Stuck in the Snow

A perfect snowy day cocktail! Tropical frozen drink with Malibu Rum and cream of coconut with a sweetened coconut rim.

Servings: 1 drink

Ingredients
  

  • 2/3 cup ice
  • 2 ounces Malibu Rum
  • 3 ounces cream of coconut
  • 1/2 cup sweetened coconut for rim

Method
 

  1. In a blender add 2/3 cup of ice, 3 ounces cream of coconut and 2 ounces Malibu Rum.
  2. Blend until smooth. This won’t be super creamy as it has an icee type of consistency. If you want a truly frozen drink, add another 1/3 cup of ice.
  3. While the blender is running, coat the edge of a martini glass with some cream of coconut.
  4. Place 1/2 cup of sweetened coconut on a plate and roll the coated edge of the martini glass into the coconut.
  5. Pour the cocktail from the blender into the prepared glass.
  6. Top with a sprinkle of sweetened coconut and serve immediately.

Notes

A fun tropical play on a piña colada, perfect for staying warm on a snowy day indoors. The sweetened coconut rim adds a nice touch of flavor and texture.
