Snow Day Coconut Rum Cocktail (Stuck in the Snow!)
In a blender add 2/3 cup of ice, 3 ounces cream of coconut and 2 ounces Malibu Rum. Blend until smooth. This won’t be super creamy as I wanted an icee type of consistency. If you want to have a truly frozen drink add another 1/3 cup of ice.While the blender is running, coat the edge of a martini glass with some cream of coconut. Then cover the edge with sweetened coconut. I like to place 1/2 cup of sweetened coconut on a plate and then roll the coated edge of the martini glass into the coconut.
Pour the cocktail from the blender into the coated glass and then top with a sprinkle of sweetened coconut.Enjoy!— Rex

- Top with a sprinkle of sweetened coconut and serve immediately.
