Super Quick Marinara Sauce

Every once in a while you need a quick meal and don’t have any jars of marinara lying around. Or, if you are like me you like to make your own, but don’t have time to let it simmer for 2 hours. I made this quick sauce that took only 15 minutes to make.

First thing grab a sauce pan and put it on medium-high heat. Then add the olive oil until the bottom of the pan is covered. Depending on your pan this amount can vary. Then sweat the onions till translucent.

While the onions are sweating open the can of whole peeled tomatoes. For a chunky sauce, pour the tomatoes into a bowl and rough chop them with a fork, potato masher, or my personal choice a dough blender. They are available at most home stores or at the grocery store. I picked mine up at the local Safeway.

For a smooth sauce, pour the tomatoes into a blender or food processor and blend them up.

Now that your tomatoes are crushed or chopped check on your onions. If they are looking transparent add the garlic. Let the garlic simmer for a minute and then add the remaining ingredients. This is also where you add your red pepper flakes if you like your sauce hot!

Let simmer for 5-10 minutes and serve. Goes great with pasta, as a pizza sauce, or even over eggs and potatoes with a little homemade hot sauce. It is simple quick and quite easy.

Ingredients
  

  • 28 oz can of whole tomatoes
  • 1 medium onion
  • 5 cloves of garlic
  • 2 teaspoons dried oregano or 1 tablespoon fresh
  • 2 teaspoons dried basil or 1 tablespoon fresh
  • 2-3 tablespoons olive oil
  • Salt and pepper to taste
  • 1-2 teaspoons red pepper flakes optional, for heat

Method
 

  1. Grab a sauce pan and place on medium-high heat.
  2. Add olive oil until the bottom of the pan is covered.
  3. Sweat the onions until translucent.
  4. While the onions are sweating, open the can of whole peeled tomatoes.
  5. For a chunky sauce, pour the tomatoes into a bowl and roughly chop them with a fork, potato masher, or dough blender.
  6. For a smooth sauce, pour the tomatoes into a blender or food processor and blend them up.
  7. Check on your onions. When they are looking transparent, add the garlic.
  8. Let the garlic simmer for a minute, then add the remaining ingredients (tomatoes, oregano, basil, salt, pepper, and red pepper flakes if desired).
  9. Let simmer for 5-10 minutes.
  10. Serve with pasta, as a pizza sauce, or over eggs and potatoes.

Notes

This quick sauce is ready in just 15 minutes. Choose between chunky or smooth sauce depending on your preference. Add red pepper flakes if you like it hot. Works great on pasta, pizza, eggs, and potatoes.
