Baked Sweet Potatoes

The past two weeks has been a little rough. I had my tonsils taken out and I have been unable to get out of bed let alone cook. However, there were a few good days in which I was able to make a few little things for my caretakers. My Mom came to visit to help me out while I was under the weather. The last week of my CSA gave me a bounty of sweet potatoes. So I decided to bake a couple for my Mom. I was unable to eat them, but they smelled really good.

Preheat the oven to 400 degrees.

These start out just like my perfect baked potato. Wash the sweet potatoes. Then coat them in olive oil and top with 1 tsp of kosher salt each. Bake salt side up in the oven for 35-45 minutes. This will depend on the size of the sweet potato. When a fork can be easily inserted remove from the oven.

Top with salt

Cut a slit halfway through each potato. Then insert 1 tablespoon of quality butter into each potato. Next top each potato with 1 tbs of brown sugar and a pinch of cinnamon and nutmeg.

Place the potatoes back into the oven for another 5-10 minutes or until butter and brown sugar melt.

Ingredients
  

  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • Pinch of cinnamon
  • Pinch of nutmeg

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Wash the sweet potatoes thoroughly under running water.
  3. Coat the potatoes evenly in olive oil.
  4. Top each potato with 1 teaspoon of kosher salt.
  5. Place potatoes salt side up on a baking sheet and bake for 35-45 minutes, depending on size, until a fork can be easily inserted.
  6. Remove from oven when fork-tender.
  7. Cut a slit halfway through each potato.
  8. Insert 1 tablespoon of butter into the slit of each potato.
  9. Top each potato with 1 tablespoon of brown sugar.
  10. Sprinkle a pinch of cinnamon and nutmeg on each potato.
  11. Return potatoes to oven for another 5-10 minutes, until the butter and brown sugar melt completely.
  12. Serve immediately as a side dish.

Notes

The size of your sweet potatoes will affect baking time. Choose potatoes of similar size for even cooking. These pair wonderfully with holiday meals.
