I had a tub of vanilla ice cream lying around and I wanted to make a sundae, but I had no toppings. So I decided to make my own hot fudge. Luckily I had a pretty stocked pantry and had a can of evaporated milk lying around. Hot fudge is really easy to make. If I had known it was this easy, I would have made it years ago.Homemade Hot FudgeThe fudge was amazing! In a heavy saucepan melt the butter and chocolate.Melt the butter and chocolateOnce melted add the sugar.Add the sugar and stir to incorporateAfter you have the sugar incorporated slowly add the evaporated milk.Drizzle in the evaporated milkBring the mixture to a boil and then reduce the temp to low. I love Chipotle! It is delicious, so I decided to recreate a burrito bowl. I utilized my fajitas seasoning, skirt steak, some black beans, cilantro lime rice, salsa and guacamole to create one of the greatest meals known to man. Dana said it was her favorite meal ever! That says a lot. The combination of rice, black beans, meat…
When I was in college I used to go to this restaurant with great pizza. One of my favorite pizzas was the tostada pizza. Basically it was taco pizza. Since the bread sticks yesterday only used one pizza dough and the recipe makes two, I figured I would try to recreate the pizza today. This…
This past weekend Nick from Macheesmo came over to grill out. I grilled, he grilled and we ate incredibly well. One of my courses was Salmon with Mango Salsa. Perfectly grilled salmon with a fresh salsa over the top. It does not get any better than that. Plus, this post is my world wide debut…
I am a huge fan of caramel and I needed a cookie that showed it. Dark brown sugar gives these a deep molasses-caramel base, then I loaded them up with caramel pieces and crushed pecans. These were some of the best cookies I have ever made and they did not last long in the house.
I would like to take time to thank all of the Mother’s out there. Especially my Mother Pat, My Wife Dana and my Mother-in-law Jane. All fabulous ladies and all great cooks. So in honor of them, I am going to showcase my favorite recipes from them. Mom’s Enchiladas Growing up this was one of…
With a toddler running around the house Dana and I have limited time to cook. We love lasagna, but having to haul out the giant stock pot to boil the noodles is a pain. Besides the extra dishes, the extra time needed to boil the noodles adds precious time to our already chaotic day. So…
