Easy Mexican Fried Rice Recipe – Restaurant-Style at Home


For Christmas I received a Blackstone Griddle.  It is the most used gift that I have ever received. I cook everything on it, from Japanese steakhouse fried rice to smash burgers. We love fried rice so much that I decided to come up with a recipe to go along with some Fajitas.  I combined some tomato sauce, chiles and seasonings to make some of the most delicious fried rice that I have ever had.  It is a huge hit at our house!

Preheat a griddle, large frying pan or wok over high heat.

Add the oil.  When the oil starts to shimmer, add the cooked rice.

Add the oil and then the rice

Cook for a minute or two.  Then add the tomato sauce and green chiles.

Add the tomato sauce and chilies to the rice

Continue to cook and then add the fajita seasoning, salt and pepper.

Mix up with seasonings

Cook until the rice starts to crisp up and then serve.

Ingredients
  

  • 3 cups cooked rice
  • 12 oz can tomato sauce
  • 2, 3 oz cans green chiles
  • 2 tbs fajita seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
Fajita Seasoning
  • Chicken Fajita Dry Rub
  • 3 tbs paprika
  • 2 tbs chili powder
  • 1 tbs sugar
  • 1 tbs garlic powder
  • 3 tsp salt
  • 2 tsp onion powder
  • 2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp chipoltle pepper ground

Method
 

  1. Preheat a griddle, large frying pan or wok over high heat.
  2. Add the oil. When the oil starts to shimmer, add the cooked rice.
  3. Cook for a minute or two. Then add the tomato sauce and green chiles.
  4. Continue to cook and then add the fajita seasoning, salt and pepper.
  5. Cook until the rice starts to crisp up and then serve.
