Stuck in the Snow – A snow day cocktail!

We have been having a rough winter here in Virginia!  The kids have been out of school for 3 days and it is not even winter yet.  So to cope with the snow and ice I figured it was time for a snow day cocktail.  This snow day cocktail is a fun play on a traditional piña colada.  I have removed pineapple and added sweetened coconut for a nice little bite.

Stuck in the Snow

In a blender add 2/3 cup of ice, 3 ounces cream of coconut and 2 ounces Malibu Rum.  Blend until smooth. This won’t be super creamy as I wanted a icee type of consistency.  If you will to have a truely frozen drink add another 1/3 cup of ice.

While the blender is running, coat the edge of a martini glass with some cream of coconut.  Then cover the edge with sweetened coconut.  I like to place 1/2 cup of sweetened coconut on a plate and then roll the coated edge of the martini glass into the coconut.

Pour the cocktail from the blender into the coated glass and then top with a sprinkle of sweetened coconut.
