It was 90 degrees here in DC and I was looking for something refreshing to cut the heat. Since it is strawberry season, I decided to make Strawberry Sodas. Not soda as in soda pop, but sodas as in the old fashion ice cream soda that you would get a from a soda fountain. Not as hard as you would think. The syrup only takes 20 minutes and the assembly of the drink takes less than a minute.
Strawberry Sodas
- Strawberry Syrup – (recipe below)
- vanilla ice cream
- soda water
- whipped cream
Strawberry Syrup
- 1 lb of strawberries
- 1/2 cup corn syrup
- 3Â tbs sugar
- pinch of salt
To make the syrup blend the strawberries, sugar and salt in a blender.
Then place in a sauce pan and add the corn syrup. Bring to a boil and then turn the heat down and simmer it for 20-30 minute until reduced by a third.
Now chill until you are ready to serve. It is recommended that you make the strawberry sauce at least a half hour before you want to use it. I like the strawberry seeds in my sauce but you can run it through a strainer to get rid of the seeds if you desire.
Time to Assemble
Take an empty parfait cup or a mug and place 2 tbs of strawberry syrup on the bottom. Then add some cut up strawberries and top with a scoop of ice cream.Â
Repeat the previous step creating a second layer of sauce, strawberries and ice cream.
Cover with one more spoonful of syrup and then fill the glass with soda water. Top with whipped cream and a bit more syrup and serve.Â
One of my all time favorite drinks. The ice cream and homemade strawberry syrup are perfect. Make sure that your syrup is really sweet, as you are diluting it in the soda water. The flavor takes you back to the soda fountain.
