I have been craving some hummus and I figured that there was no time like the present to make my own. I wanted a garlicy hummus so I opted to make roasted garlic hummus. This is another super easy recipe as long as you have a food processor. Without one it could be a little hard to make. However, if you like to make pie doughs, hummus, pesto or quickly slice or shred vegetables they are less than $20.Â
With the roasted garlic and the fresh tahini this is a great dish.
Roasted Garlic Hummus
- 1 head of roasted garlic
- 4Â tbs extra virgin olive oil
- 1/2 tsp salt
- 3 tbs water
- 1 can of chickpeas (15oz)Â – rinsed
- juice of 1 lemon – approx 3 tbs
- 6 dashes hot sauce
- 2 tbs tahini
- dash paprika
Roast the garlic – Roast the garlic with a bit of olive oil at 400 degrees for 30-40 minutes. An in-depth post on how to roast garlic is here.Â
Place the roasted garlic, olive oil and salt in a food processor and pulse until the mixture is finely chopped. Scrape the sides and add the water to the mix. Pulse again until everything is incorporated.
Add the chickpeas, lemon juice and hot sauce and run the processor until the mixture is smooth. Roughly 1 minute. Place the mixture into a bowl.
Now add the tahini into the bowl and whisk together. If the mixture is a little thick add a little olive oil to it 1tsp at a time until you get your desired consistency.
Spoon the mixture into a serving vessel, top with a little olive oil and a dusting of paprika. Serve with toasted pitas or with crispy pita chips. Hummus is also great on fresh vegetables.
This is a quick and easy appetizer, side dish or mid-afternoon snack.
