Oatmeal Chocolate Chip Cookies

The other day I wanted something sweet.  So I poured through my cupboards and refrigerator and all I found were the components to make oatmeal chocolate chip cookies.  On a good day this would be awesome, but I wanted the cookies right away.  Needless to say, I had to wait.  🙁  But as you can tell from the title of the post, I did get the cookies.  However, I needed 1 cup of butter but screwed up and only added 1 stick (1/2 cup).  You would think that this would screw everything up, but they were awesome!!  Super simple, but super tasty.  The perfect cookie.  Plus, by accident, they became healthier.  How cool is that.

I made a small stack for the picture, you could easily down 8 of these in a sitting.

Oatmeal Chocolate Chip Cookies

  • 1 stick of butter
  • 3/4 cup sugar
  • 3/4 cup br0wn sugar
  • 2 eggs
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups rolled oats
  • 1 – 2 cups chocolate chips
  • 1/2 tsp vanilla

Preheat the oven to 350 degrees Fahrenheit.

In a large bowl or the bowl of your mixer, cream together the butter and sugar.

Cream the sugar and butter

When lightened in color add the eggs one by one, mixing after each addition.  Then add the vanilla.

On a sheet of wax paper, sift the baking soda, salt and flour together.  As always, the wax paper will help you funnel the ingredients into the mixing bowl.

The wax paper makes pouring the flour into the mixer easy.

Slowly add the flour to the mixture until combined.

Since there is so little butter in the mixture you will need to mix the oats and chocolate chips in by hand.  Make sure to stir the ingredients together.

Mix in the chocolate and oatmeal

Place teaspoon sized ball onto a greased/or parchment lined cookie sheet. Once you drop the batter onto the cookie sheet, flatten the tops so that the cookies are not round.  Due to the lack of butter, these cookie will no spread out as much.   Bake for 12-15 minutes.

Portion out the cookies

Let the cookies cool on the sheet for 10 minutes and then remove them to a cooling rack.

The cookies were not crumbly or even too dry.  They were amazing.  Some of the best cookies I have ever eaten.

  1. Thanks! These came out perfectly, really appreciate that I only need one stick of butter, so many recipes call for TWO.
