Personal Lasagna

Personal Lasagnas

Last week was Dana’s Birthday and I wanted to make her favorite meal. Lasagna! So I looked around and found completely flat sheets of Lasagna noodles by Barilla. They fit almost perfectly into my individual oven safe bowls and they also do not require pre-boiling. For that reason I decided to make individual lasagnas. This recipe is for two personal lasagnas and is extremely delicious.

Personal Lasagnas

  • 3 Italian Sausage Links (mild or spicy)
  • 6 sheets lasagna Noodles
  • 1 egg
  • 8 oz ricotta cheese
  • 8 oz mozzarella
  • 2 oz freshly grated Parmesan cheese
  • 1 tbs olive oil
  • Sauce – (Super Quick Marinara)
    • 28 oz can of whole tomatoes
    • 1 medium onion
    • 5 cloves of garlic
    • 2 tsp dried oregano, 1 tbs if fresh
    • 2 tsp dried basil, 1 Tbs if fresh
    • Olive oil
    • Salt and Pepper
    • 1-2 tsp Red Pepper Flakes (Optional, but of course I used them.  I like it hot!!)

Start out by making the super quick marinara sauce using the recipe here.  This sauce is not necessary, feel free to use your favorite sauce or even a jarred sauce 🙁

Next remove the sausages from the casings and brown them using 1 tbs olive oil over medium/high heat.  Using a wooden spoon break apart the sausages to make a mixture similar to ground beef.  Browning the meat will take 8-10 minutes.

Take the 8 oz of ricotta and mix it with the egg.  I like to do this with a whisk as it gets the egg mixed throughout the cheese mixture the best.

Spray two 12-16oz oven safe dishes with non-stick spray.  Then layer the bottom of the dish with marinara sauce and top with one of the lasagna sheets.

Start layering the lasagna

Then top the lasagna sheet with a couple spoonfuls of the ricotta mixture.  Then a handful of the mozzarella. Next repeat the layers starting with the marinara.

Finally top with one more sheet of the lasagna noodles, marinara, mozzarella and finally some of the Parmesan cheese.

Ready for the oven

Spray some aluminum foil with non-stick spray and cover the dishes.  Bake the lasagnas in a preheated 350 degree oven for 45 minutes or until the cheese is melted and starting to brown.

The personal lasagnas were perfect.  Dana loved her birthday meal.  It was the perfect surprise for her, along with the fabulous chocolate cake.

    1. Jenn – I love making and eating anything that is meant for one person. I have no idea why, but it is a little exciting. Hope you get some lasagna soon!

  1. I'm picturing a lasagna party…each person builds his/her own adding mushrooms, olives, peppers, etc. as desired. Drink wine and enjoy antipasto while they bake…sounds like a plan!

    1. That is a great idea! I might have to do that the next time I have a party. Guess I need to register for a couple more single serve baking dishes.
