Last week I made an impromptu dinner for Dana. Â I wanted to make pasta, but I did not have a bread side. Â So I looked through my fridge and found an extra pizza dough. Â I know, yes, I have pizza dough in the fridge. Â I decided to make it into a garlic bread-like swiss roll. Â It ended up being the greatest garlic inspired dish that I have ever made. Â It is absolutely amazing!!
Garlic Bread Roll
- 1 pizza dough – (recipe for Basic Pizza Dough)
- 6 cloves garlic, minced
- 1/2 cup whipped butter
- 1/2 cup mozzarella cheese
- dash kosher salt
The first step is to make the pizza dough and let it rise till it doubles. Here is a simple and easy pizza dough. If you are running short on time, almost all grocery stores have pre-made pizza dough in the deli section and/or freezer section, or you can always stop by a local pizzeria and purchase the pre-made dough.
Preheat the oven to 350 degrees Fahrenheit.
Roll out the pizza dough to make a rectangular in shape dough. Â Mine ended up being oval, but it came out fine. Â Roll it out to a rectangle, roughly 12 inches wide by 18 inches long.
Next mix the butter, garlic and salt together.
Spread the butter mixture evenly over the pizza dough.
Then top the dough with a light coating of mozzarella. Â Now gently roll the dough up like a swiss roll. Â Take your time and try not to pinch the dough.
One you have it rolled up, place the seem side down on a greased cookie sheet.
Brush the remnants of the butter mixture over the top of the roll.
Bake in the preheated 350 degree oven for 30 minutes. Â I know this sounds low and long, but it is the only way to fully cook the dough all the way through.
When browned, remove the bread from the oven and let cool for 5 minutes before cutting.
Slice into 1 inch wide slices.
Serve as a side for your favorite pasta dish.

You rock Rex. Alexis has been cooking up a lot of bread on her Egg and we often have extra pizza dough. She just looked at this one and said “bleeping yum!”. And we were already planning on having spaghetti tomorrow.
