Over the past couple of weeks we have been trying to get settled into our new house. However, we still have a ton of things to move and unpack. So we have been enlisting the help of our family. Last week my Mother came out to help. This week we have Dana’s Parents helping out. We were out to dinner the other night, when I discussed making cookies. I had no idea what to make. Then, Dana’s Dad said M&M ® Cookies. I have never made them before, so this would be perfect.
M&M® Cookies – (From Joy of Baking)
- 2 cups all-purpose flour
- 1 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter, room temperature
- 2/3 cup sugar
- 2/3 cup light brown sugar
- 1 large egg
- 3 large egg yolk
- 1 1/2 tsp vanilla
- 1 cup M&Ms ®
Preheat the oven to 350 degrees Fahrenheit. Place a rack in the center of the oven. Line a cookie sheet with either a Silpat or a sheet of parchment paper.
In the bowl of an electric mixer, cream the butter and the sugars until light an fluffy. Roughly 3 minutes.
Scrape down the sides of the bowl and then add the egg, egg yolk and vanilla extract. Beat until combined.
In a separate bowl mix together the flour, salt and baking soda. Turn the mixer down to low and slowly add the dry ingredients into the creamed butter mixture.
Form the dough into 1-2 tbs balls and place them on a cookie sheet.
Then using your hand or the flat bottom of measuring cup, gently flatten the dough balls into 2-3 inch rounds.
Cover the top of the cookies with M&M’s ®. Then gently press them into the tops of the cookies.
Bake the cookies for 10-14 minutes until they are lightly browned. They will seem a little soft but they will firm up and crisp when cooled.
Let the cookies cool on the cookie sheet for 2-3 minutes and then remove them to a wire rack to cool completely.
