Yesterday I had friends over to watch College Football. We were hungry and I didn’t have much in the house. However, I had some frozen wings, some wingsauce and 1 hour to make a pizza dough. So I made Buffalo Chicken Pizza. Super simple and so darn tasty.
Drizzle the top of the pizza with ranch dressing right before serving.
Buffalo Chicken Pizza
The first step is to make the pizza dough and let it rise till it doubles. Here is a simple and easy pizza dough. If you are running short on time, almost all grocery stores have pre-made pizza dough in the deli section and/or freezer section, or you can always stop by a local pizzaria and purchase the pre-made dough.
Next grill the chicken breasts or wings. I used about 2lbs of chicken wings. Place the chicken on the grill and cook till the wings read 180 degrees or the chicken breast reads 165 using an instant read thermometer. We recommend using the Thermoworks Thermapen MK4. The MK4 can seem a little expensive, but trust me it is worth it. Once you have a good and accurate thermometer you will use it for everything.
If the MK4 is a little too pricey for you, they also offer a great affordable instant read thermometer with the Thermapop that has a 3-4 second reading time.
Once the chicken is fully cooked, remove from the grill and allow them to cool.
Next pick off all of the meat from the chicken wings and place it into a clean bowl.
Now add 1 cup of the buffalo sauce to the chicken. Mix thoroughly.
Roll out your pizza dough to form a 12-14 inch pizza.
Cover with the remaining buffalo sauce.
Next spread out the chicken and cover with the cheese.
Place into a preheated 500 degree oven for 10-12 minutes.
Remove from the oven and cut into slices. Next lightly drizzle the pizza with the ranch dressing and enjoy.
Unfortunately I thought I had some ranch dressing in my fridge but it expired 6 months ago. Not the biggest fan of ranch so I guess I never checked it. So I did not have the cooling power of the ranch to help with the extreme heat coming off my buffalo sauce. It was a little spicy but extremely tasty.

- 2 cups mozzarella
